Bernard, I seriously doubt that you're eating turkey today, but thanks for the greeting. Hope all is well in Donegal.

You’re dead right Bob, I’m not fond of turkey. I don’t even have it at Christmas if I can avoid it. Growing up I was part of a family of ten boys and six and we killed two geese every Christmas. Now that there’s only two of us we have chicken and ham for Christmas dinner.

Interesting you don’t like turkey but you will eat goose…..you can come over anytime and feast on the Canadian “invaders” the camp out on my property in the winter. Dinner is served!

By the way I think turkey gets a bad rap because most be don’t know how to prep the bird….must be marinated 24hrs in brine to retain the water content if not it’s dry as Las Vegas.

I’ve never had a dry turkey using these. Thaw, bake, and enjoy. Then a nap… :)):

You are welcome. Did you know that Scotland suffered ethnic cleansing by the English way back in history. They were the first country who used this method to clear the land of the the natives. They were also the first country to establish concentration camps for the civilian population during the Boer War in South Africa.

With 18 in the family in those times you ate whatever was put on the table or else you starved.

There’s not much mentioned in our history books about The Clearances. Wealthy English landowners evicted subsistence farmers in both Scotland and Ireland to make way for large scale sheep farming. The result was significant immigration by the Scots-Irish to the US in the 1800’s, particularly to the Appalachians. This was accelerated by the Potato Famine later in the century.

Times more difficult than any of us have ever seen. Yes, I knew of the cleansing that took place. Made those who escaped the treachery all the more determined.

Yes it did make them more determined to succeed, and in the New World (USA) they took the opportunity and had the freedom to do it
