Pickled Veggies

Anybody on here try pickled veggies?--We do cucumbers, beets,cauliflower, small green beans, onions, and last time, sweet corn.
Had some of the corn and it's "different", not bad.
Just wondered if anyone else does these. thanks ; sonny
 
Have pickled okra. Since I'm the only one in the family that likes okra, don't do that any more. Have tried pickling other vegetables with poor results. Probably the wrong brine mixture.

Daughter pickles beets using my mother's recipe. Very good.
 
Done a lot and love them all. Grew up on sauerkraut. Pickling is good for good has a lot of good bacteria.
 
Made pickled corn this year but I don't care for it. We always make dill pickles we have almost ate last years supply. We are big sandwich eaters at the lake all summer and lunch breaks at home, nothing like a cold dill pickle. Probably made 35 quarts this year will do more this next year.
 
I pickle peppers. I grow Tabasco plants (got them from the Tabasco Pepper Sauce factory on Avery Island, LA. I also pickle Long red chilies. Nothing complex, I just cut them up and store them in jars of vinegar. Makes for a great "hot sauce" to drip in some gumbo or on a salad.
