Sweet Potato Pecan Pie

3 Eggs (lightly beaten)
1 c. Sugar
1/2 c. Corn Syrup
1 c. Sweet Potatoes (cooked and mashed)
1 T. Vanilla Extract
1 c. Pecan Halves
9 in. unbaked Pie Crust

Preheat oven to 375 degress. Combine first five ingredients, mix well.
Gently stir in pecan halves. Pour into pie shell. Bake 55 to 60 minutes, or until knife inserted near center comes out clean.

It certainly does look good and I do think I will try it since Pecan pie is my favorite kind of pie. Sweet potatoes...hmmmm... Sounds delicious. :)
