Re: rhubarb pie
My wife just made a strawberry rhubarb pie the other day also. when she sees it in the store she snaches it up. They dont put much out on the shelves here. Not to many know what it is. One lady saw her with it at the check out and asked her if that red cellerie was any good.
My garnd father always had some growing wild out behind the old farm house up in Hawley MA. Mom would pick two big paper shopping bags full and boil it down, she put some raisins in it as it simmered awhile on the stove. Us kids would put it on our oat meal and cream of wheat for breakfast. good over icecream too. Great stuff.

Re: rhubarb pie
I like the pie tart, so I do not use the strawberries. We have a good stand that allows us all we want and enough to give some to friends.
Jan makes the rhubarb sauce. Great over ice cream, pound cake, pancakes and waffles.
MMMM good.

Re: rhubarb pie
I prefer Canada Red but have mostly Victoria which is a green rhubarb. Haven't had rhubarb pie since last night nor suace since thursday. For those living where it is too hot for it to do well I can start Victoria seed in February and be eating it in August. This variety is often grown as an annual. Don't know if this would work in the south but it might be worth a try. I'm growing Victoria as a prennial and it does produce well but puts out a lot of seed stalks which need to be cut. One of these days...............I hope to divide the red and destroy the green Vern

Re: rhubarb pie
does the red taste different than the green? or is it just for appearance. I tried to find some rhubarb plants to plant and everyone is sold out. I will try again later winter for next years season.

Re: rhubarb pie
As far as I can tell the taste is the same. I just think the red looks better especially in pie, not so much so as sauce. I also like rhubarb crunch, Think pie made in a cookie sheet with the top like Dutch apple pie. You might want to consider ordering early from a mail order seed company. That puts you in line. They won't ship until the proper planting time. Vern

Re: rhubarb pie
We always use a single crust, with the crumble topping. You get pie and crisp in the same dish.
