'Country, that will go good with the TN "Beans and O'possum". I hope I get one soon, so far the 'possum trap near the persimmon tree has had no luck.
Hopefully this cold snap and small snow cover will get them out and searching for food.
Do you recon anyone would notice if we substituted some good 'ole coon meat for the 'possum?

AAhhh...I don't know about my buddy Dale ...but I ALWAYS Skin N' Dry my Possum before it goes into the Smoky Mountain Beans (besides...usin' coon meat after the dogs have treed it just doesn't taste the same) ...'Country'
