pound cake ala Cathy via Carl
Hi all,
Cathy's out in Chicagoland this week, she's excited about the ladies have this "on-line coffee clatch" and is racking her brain to come up with a "handle". In the meantime, she instructed me to send this recipe.
The cake is very moist, has good texture without being too heavy, and has a geat lemon taste. If you like lemon, you'll love this pound cake.
Lemon Cream Cheese Pound Cake
Cake:
3 cups sugar
1 ¼ cups butter (2 ½ sticks)
one 8 oz package cream cheese
1 teaspoon lemon juice
2 teaspoons vanilla
1 teaspoon lemon extract
½ teaspoon orange extract
pinch of salt
6 eggs
3 cups cake flour
Preheat oven to 325 degrees F. Grease and flour 10 inch tube pan, or 12 cup bundt pan, or two 9x5 loaf pans.
In a large bowl, beat sugar, butter and cream cheese until light and fluffy. Blend in on low speed – lemon juice, vanilla, both extracts and salt. Add eggs, one at a time, beating well after each one. Slowly add flour and beat until smooth. Pour batter into greased and floured pan.
Bake at 325 for 1 hour 15 minutes, or until toothpick inserted into center comes out clean. Cool 10 minutes on wire rack. Remove from pan and let cool completely.
Glaze:
1 cup powdered sugar
1 tablespoon soft butter
2-3 teaspoons lemon juice
In a small bowl, blend ingredients for the glaze and beat until smooth. Drizzle over cooled cake.

This Lemon Cream Cheese Pound Cake is definitely a keeper. We had it for desert tonight and all loved it.
Because of Rudi's diabetes and heart problems, I did, however, make it heart friendly and diabetic friendly. I substituted half the sugar for Splenda, half the butter for non hydrogenated margarine and used fat free cream cheese. It turned out really nice and we could all enjoy it.

We are looking forward to trying the pound cake but my doctor tells me that I must lower my cholesterol count through diet and exercise or control it through medication. Of the two choices, I prefer diet and exercise. There are several recipes which we want to try but for now meal time means Lean Cuisine, Healthy Choice or Smart Ones. But this too shall pass and we can eat real food again. Meanwhile, Janie is saving the recipes from this forum for later use. Dan

With the modifications Em has made to the recipe, even I can have a SMALL piece of the cake after a meal.
After going through what I have in the past few months, there is no way I am going to risk raising my cholesterol or triglycerides. My risk factor was 17 to 19 prior to the hospital, but now it is more like 4 to 5 which is a vast improvement. In my case with meds and careful attention to my diet, I find that I can have some of life's little pleasures and not feel guilty. Also, my cardiologist said that we have to reward ourselves occassionally, otherwise we will never be ble to maintain a good diet for the periods of time it takes to permanently change one's life habits.
Be aware though that most of these so-called Healthy pre-packaged meals are not so Healthy The different types and the pretty substantial amounts of sodium and potassium that you will find in them as well as some of the other chemicals will cause as much damage or more than would be generally thought. I no longer allow any of these so called Healthy pre-packaged things into my diet. AND as a side effect my blood pressure is now normal on the whole.
Oh and with the modifications this recipe has become more Heart and Diabetic Friendly. Not to say that it is as healthy as a tossed salad, but is a pretty good compromise A good key phrase is: all things in moderation...

My doc gave me the same choice in August 2003, lose the flab or start taking pills to reduce cholestrol and BP. I lost 55 pounds between Cubarama 2003 and Cubfest 2004 with diet and exercise. Total cholestrol dropped from 300 to 210. Blood pressure dropped from 150/100 to 115/60.
You can have cake, just eat a little piece and take the rest to the folks at work!
