Recipe for Lemon dessert I brought to CI, Larry:
CREAMY LEMON SUPREME

Crust: 12 lemon crème-filled sandwich cookies finely chopped
3 T melted butter

Filling: 2 lemons
½ cup sugar
1 pkg lemon cook and serve pudding
2 cups water - divided
2 egg yolks
1 T butter
2 pkg (8 ox) cream cheese (can be reduced fat)
½ cup powdered sugar
1 container (8 oz) frozen whipped topping - thawed

For crust: Combine crumb and melted butter. Press firmly into 9 inch square pan. Refrigerate. For filling: Prepare pudding according package directions using 2 egg yolks and water. (Stir ¼ cup water into pudding, egg yolks and sugar before adding the remainder of the water.) Add ¼ cup lemon juice and 1 T. butter. Reserve ½ cup of pudding. Cool for 15 minutes. In separate bowl combine softened cream cheese and powdered sugar and the reserved ½ cup of pudding. Fold in 2 cups whipped topping. Pour over crust an spread evenly. Add ½ t. lemon zest to remaining pudding and pour over cream cheese layer. Refrigerate. Decorate with remaining whipped topping or spread remaining topping over top of pudding layer.
