horseradish

I will be making some springtime horseradish this week, I am looking forward to a good sandwich with a spoon of horseradish

That's good stuff, fresh. Seems to lose its potency, fairly quickly. Good to clear the sinuses! Ed

I forget exactly how it works, but the time between the grinding/shredding and putting in water/vinegar has something to do with potency of the horseradish. Try a web search .....

I made a batch up yesterday, I just cut the horseradish into small chunks, grind them up in the blender and add vinager. I did it in the garage with the door open, boy does it take your breath away. then of coarse I had to sample a spoon full.. WOW , after I cleaned up I made a ham saandwich with the horseradish on it, it was so much better than store bought horseradish.
I grow mine in half whiskey barrels, 3 of them. that way it stays where i want it and it dont take over. parts of the root break off when digging it up and that regrows in the spring.

And yes it does sorta take over where it's planted. My friend with horses says they love the stuff (at least the leaves), could be where the name comes from??

Can't beat a good pot roast with carrots and potatos. Then a big spoon full of horseradish on the side.
