Cornbread and Muffins as per Beaconlight

This is Beaconlight's Recipe from the "Whats Wrong With My Corn Bread ?" thread by Mag Man. I though for easy access to the recipe, it deserved it's own thread :idea: Hope you don't mind Bill. :?: :D

Cornbread and Muffins as per Beaconlight

Recipe

1/2 stick butter
1 cup yellow corn meal (stone ground is best)
3 tablespoon all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
pinch sugar
1 cup milk
1 egg

Pre heat oven to 425 degrees. Put butter in a small cast iron skillet. Put in the oven until melted. Mix dry ingredients. Add milk and egg. Mix well and pour into hot melted butter. Bake 425 for 20 minutes

For muffins melt 3/4 stick butter mix 1/2 stick into the batter. Use the other 1/4 stick butter to grease the muffin tins. Bake at 400 degrees for 20 mins or until tops are a nice light brown.
