Whats Wrong With My Corn Bread ?

Hi Good People,
I have a question that maybe someone may be able to answer.
How come when I make corn bread or muffins they some times come out perfect and sometimes really crumbley? What am I doing wrong ? I dont beleve its oven times either.

Well, too long in the oven is one of the big reasons. Since you are pretty sure that isn't it, maybe the amount of fat (oil, lard whatever you use) is the variable.

Maybe corn bread can't be made that far north.

If you're not using Washington brand corn muffin mix, there's the problem. Made in beautiful Halethorpe, Maryland.

WELL IT COULD BE OVEN TIME I GUESS. I use jiffy mix mostly out of the box I have a jar of ground corn in the cupboard but I am not sure how to use it from scratch. It just seems that no matter how long i leave it in or take it out sometimes there ok and other time foget spreading anything on them they just croumble up.

Jiffy I find needs a little white flour and a dab of baking powder added. Corn flour doesn't have the gluten that wheat flour does and doesn't stick together as well.

Recipe
1/2 stick butter
1 cup yellow corn meal (stone ground is best)
3 tablespoon all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
pinch sugar
1 cup milk
1 egg

Pre heat oven to 425 degrees. Put butter in a small cast iron skillet. Put in the oven until melted. Mix dry ingredients. Add milk and egg. Mix well and pour into hot melted butter. Bake 425 for 20 minutes

For muffins melt 3/4 stick butter mix 1/2 stick into the batter. Use the other 1/4 stick butter to grease the muffin tins. Bake at 400 degrees for 20 mins or until tops are a nice light brown.

The problem with the corn bread could be the weather if it is rainy or damp it will hold together, if it dry or hot it might be dry and crumble. I have found that to be true. Boy does Bigdog like his corn bread.

Some of us guys cook too ya know!....I've lurked a bit and stolen a couple of recipes/ideas already! I'll cease with the silly posts though :wink: . It's kinda like at home in the kitchen...we just can't resist comin in there and pesterin you ladies when yur makin our favorite stuff !

Any of you ladies interested in my Great-Grandmother's recipe for pumpkin bread? We've been enjoying it for 60 yrs or more...I've been making it since she passed on in 1987.
