Carrot cake from Chatty Cathy

Carrot Cake
2 cups sugar
1 cup oil
3 cups grated carrots
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon mace (optional)
4 well beaten eggs
1/2 cup walnuts
Grease and flour the sides of two 8 inch cake pans and cover the bottom with waxed paper.
Blend sugar, oil and grated carrots together well. Add eggs. Sift dry ingredients together and gradually add to the mixture. Add walnuts. Pour batter in the cake pans and bake 300 degrees for 45 minutes to 1 hour. Test cake with toothpick to check when done.
Icing:
8 ounce cream cheese
1 stick butter
1 box confectioners sugar
1 teaspoon vanilla
Top with icing while cake is warm, then sprinkle with 1 cup chopped walnuts.
