Postby Gary Dotson » Mon Jul 19, 2010 5:38 am

Several people at the Tug commented on Regina's Cucumbers & onions & some of the ladies asked that the recipe be posted here, so here it is: This is from COOKS.COM

7 cups thin sliced cucumber
1 cup thin sliced onion
1 tbsp. salt
1 cup vinegar
2 cups sugar
1 tsp celery seed
1/2 tsp mustard seed
1 cup water (Regina added this part, not mentioned in the original)

Combine: cucumbers, onions salt & water, let set 2 hours. Drain, do not rinse. Mix together: vinegar, sugar, celery seed & mustard seed, bring to a boil, allow to cool. pour over cucumbers & onions, leave in refrigerator 3 days then freeze in small portions.
