polka dot pumpkin cupcakes

1 8oz package cream cheese
1 large egg
2 Tbsp sugar
1 cup semi-sweet mini choc. chips
1 (16oz) pkg. pound cake mix
1 1/2 cup pumpkin
1/3 cup water
2 eggs
2 tsp. pumpkin pie spice
1 tsp. baking soda
-preheat oven to 325. grease or paper line about 20 muffin cups.
-beat cream cheese (softened), egg and sugar in small bowl until smooth. stir in morsels and set aside.
-combine cake mix, pumpkin, water, eggs, pumpkin pie spice and baking soda in large bowl; beat on medium speed for 3 minutes.
pour batter into prepared muffin cups in 3 LAYERS: (the cream cheese will be the suprise center)
-about 1 1/2/Tbsp pumpkin mixture
-about 1 1/2 Tbsp cream cheese mixture
-about 1 1/2 Tbsp pumpkin mixture
bake 22-27 minutes (toothpick test) cool in pans about 10 minutes.
remove to wire rack and cool.
~my daughter and i made these a few weeks ago. they were so yummy. they tasted better chilled in the frig.
