Cream Cake

CREAM CAKE
3 cups flour
1 1/2 cups sugar
4 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups heavy cream, chilled
1 1/2 teaspoons vanilla extract
3 eggs
Lightly grease and flour 2 cake pans. Sift flour, sugar, baking powder and salt together and set aside. Pour well-chilled cream and vanilla into a deep bowl and beat until stiff. Add eggs and beat until just blended. Add flour mixture and beat until batter is blended. Pour into pans. Bake in 350 degree F oven until center tops of cakes spring back when lightly touched with finger, about 25 to 30 minutes. Cool cakes in pans for 10 minutes. Remove cakes from pans and allow to finish cooling.
WHIPPED CREAM FROSTING
2 cups heavy cream, chilled
1 teaspoon vanilla extract
1/4 cup sugar
Combine well-chilled cream and vanilla in a deep bowl. Gradually beat in sugar and continue beating until stiff. Spread between layers, on top and sides of cake. Chill and enjoy.
