Just had to share this receipe. Wife's been making this for me awhile, and it has become a regular at our house since she/found created it.
8) Potato Soup 8)

6 medium sized potato’s, peeled, and cubed
1 medium onion diced
1 stick of butter
1 ½ Cup of shredded cheddar cheese
1 lb of Italian Sausage (Jimmy Dean)
1 12oz Can evaporated milk

-Place potato’s and onion in large pan, fill with water, about ¼ inch above contents. (higher water level, the more “soupy” the end product will be, less water, thicker it will be) Bring to a boil and simmer until tender. (20-30 minutes)

-1 lb of Jimmy Dean Italian sausage, crumbled and fry

-Once potato’s are tender, add 1 can evaporated milk, sausage, cheese, butter. Turn heat to medium/low, ready to severe in a couple of minutes. Should serve 4 people.

-I like to sprinkle a few Frito Lay SCOOPS chips on top. For the salt content and the crunchiness.

Doc, I tried your recipe today. I had some frozen sweet Italian sausage in the freezer which had to be used, so I whipped up a batch of potato soup! 8) I really like it. It has a very good flavor. However, I think that I should have used your recommended sausage. Mine had been coarse ground and I would have liked smaller pieces. I was going to start chopping it in the pan while frying, but "The Boss" don't like me doing that to Teflon skillets! Thanks for the recipe. It's a keeper. We both liked it.It's getting harder and harder to please her. Larry

Hi John,

I'm about to see if I can make some here at my house. One question is it 1 & 1/2 cups of cheese or just 1/2 cup of cheese?

Thanks,

Lance
