I'm new here and I'm not sure if I'm gonna get shot by the ladies for posting on their forum but I thought that most of you might enjoy this. It's one of my favorites...

White Bean Chicken Chili

Fabulous served with fresh corn bread on a cold evening!

Makes 11 cups
PREP TIME: 10 minutes
COOK TIME: 45 minutes

1 jar (48 ounces) great northern beans
2 cups (9 ounces) cooked diced chicken (I've use canned with good results too)
1/2 medium red onion
1 tablespoon garlic crushed garlic
2 teaspoons ground cumin
1/4 teaspoon ground cloves
1 teaspoon ground oregano
1 teaspoon cilantro
1/4 teaspoon cayenne pepper
2 cans (4.5 ounces each) chopped mild green chilies
2 cans (14.5 ounces each) chicken broth
2 cups (8 ounces) grated Monterey Jack cheese

Combine beans, chicken, onion and garlic powder, cumin, cloves, oregano, pepper, chilies and chicken broth in a stock pot or large sauce pan. Bring to a boil over medium high heat.
Add cheese. Reduce heat to medium low and simmer for 30 minutes. Serve hot. If desired, garnish each bowl with sour cream and grated Monterey Jack, Pepper Jack OR cheddar cheese.
